The Chivo de Canillas (Goat of Canillas) is produced using the best breeds of suckling kids from the Malaga province. They are selectively chosen thirty days after birth, weighing 4.5 kg. The herds feed on the wild rosemary and thyme whilst they roam the Sierra de Tejeda National Park. The meat’s flavours are enhanced owing to a traditional recipe, predominantly extra virgin olive oil, but also garlic, salt, pepper, parsley and the lightest touch of lemon juice. Then, introduced into a furnace, the gradual and gentle heat of olive wood does the rest, delivering tender pink, juicy meat with a characteristically delicate, golden skin.
Once roasted, the Chivo de Canillas is vacuumed-wrapped, guaranteeing the preservation of all natural nutrients, as well as maintaining its freshly cooked taste.
Furthermore, the Chivo de Canillas is an entirely artisanal and organic product, free from preservatives, gluten and additives.
Chivo de Canillas: Preparation Tips
Preparation of this exquisite roast is very straightforward, as the product is pre-prepared and one merely needs to heat it through.
Remove from the vacuum-packaging, not forgetting to sprinkle any remaining juices over the meat and microwave for four minutes or else heat in an oven for ten minutes.
